SVRV CAMPERS' FAVORITE SALMON

SOCKEYE FILLET
REAL MAYO
ORANGE JUICE
ORANGE RIND
BROWN SUGAR

Preheat grill. While grill is preheating, cover top of sockeye fillet with thin layer (enough to cover) of mayo, squeeze approx. 1 Tbs orange juice onto mayo, grate fresh orange rind (approx. ½ orange) on top and sprinkle top with brown sugar.

Place on grill skin side down, close grill, turn off burners under fish and leave other side on (if using charcoal grill do not place fish over coals but have a good fire on other side approx 300 to 400 degrees).

Cook for approx. 20 min. or until it lifts easily off of skin and can be pierced easily with knife (if fish is skinned place on foil but do not wrap).

DO NOT OVERCOOK.

Serve immediately.
