AL'S SAUSAGE CHOWDER

8 TO 10 POTATOES PEELED AND CHOPPED
1 OR 2 LARGE ONIONS CHOPPED
SAUSAGE TO EQUAL 4 TO 5 LBS (kielbasa/jimmy deans/brats/breakfast/sweet Italian....mix and match/your choice/be creative)
5 TO 6 EARS OF CORN (roasted)
1 OR 2 RED AND YELLOW PEPPERS (roasted)
WHOLE MILK OR ½ & ½ OR CREAM
CHIPOTLE PEPPER (and some juice)
ONE LARGE CAN FRENCH FRIED ONIONS

Brown sausages drain and set aside. In same pan add potatoes and onions and add water to just cover and about ½ inch over. Simmer until crisp done. While this is cooking roast corn and peppers on barbecue until just charred. (frozen corn can be substituted) Remove corn from husks, remove seeds from peppers, chop and add to potato, onion mix. Add sausage. Add enough milk or cream to make right consistency. Add chipotle to taste with some of the liquid from the can. Be careful and taste as you add. Just before serving add ½ can fried onion rings and sprinkle rest of can on top.
Makes a huge batch for a potluck or family reunion. Enjoy!
