CEVICHE SVRV STYLE

2 or 3 PARTS CHOPPED FRESH RAW FISH
(either clams (buttons &/or necks)-halibut-salmon etc.)
CHOPPED CABBAGE
CHOPPED TOMATOES
CHOPPED ANAHEIM PEPPER (or hotter)
CHOPPED CILANTRO
CHOPPED GREEN OR RED ONION
JUICE OF 1 LIME (or to taste)
S & P

Optional:
Mayo
Capers
Hot sauce
Cucumbers

Chop whatever fresh fish (raw) you have chosen, add lime and rest of ingredients. Adjust the ingredients to your liking. Let sit for 10 minutes to "cook" in lime. The lime will cook the fish and the longer you let it sit in lime the longer it will (cook... and toughen)! Serve with tortilla chips or crackers.
