BLACKENED GRILLED SALMON OR HALIBUT

SALMON OR HALIBUT FILET (skin on)
HEAT GRILL TO HIGH
COVER LIGHTLY WITH OLIVE OIL
SPRINKLE LIBERALLY WITH BLACKENING SPICE (your favorite is fine)

Place on grill (skin side down)
Turn off burner below fish or move coals to opposite side of barbecue (indirect heat)
Cook for 10 to 20 min. depending on thickness of filet (do not turn!)
Carefully slide spatula between flesh and skin
Serve immediately
